In honor of his own mom, Chef Mark Dommen has also shared a Swiss family recipe stemming from his Swiss childhood. Officially known as Zurcher Geschnetzeltes, the recipe instructs how to prepare a Zurich Style Veal in Cream Sauce, a dish that Mark’s mom prepared regularly.

This is a very traditional dish that my mother would make quite often for dinner. However, veal wasn’t always available to us, so she would make it with pork loin or pork tenderloin. It’s really quite simple. I’ve changed it a little by using reduced chicken jus instead of flour as the thickening agent and I cut the amount of cream in half. It makes the dish lighter to eat and it’s gluten free. Geschnetzeltes is traditionally served with rösti (recipe also provided).

This sparkling wine is produced by the age-old tradition of Méthode Champenoise, during which secondary fermentation occurs in the bottle – a style from which only the finest sparkling wines are produced. It is then laid down to cellar “en tirage” for over 12 months. The prolonged aging allows the wine to interact with the yeast in the bottle further complexing the aromas and flavors. Effervescent aromas of green apple and tropical notes evolve into a crisp citrus taste, balanced acidity and fine bubbles. Executive Chef Hideki Myo and Food & Beverage Director Ana Artadi take inspiration from their Japanese and Peruvian backgrounds to present a four-course Nikkei-inspired Christmas dinner, available at Adrestia through the holiday week (December 20 through Christmas Day, December 25).  Menu highlights include Jagaimo Rellenas – plant based “beef”, toma-katsu sauce, Corvina Nikkei, ahi panca with konbu dashi and Wagyu Lomo Saltado with whisky barrel aged soy sauce, fries and black rice. End the meal with a traditional Peruvian dessert – Panetón Bread Pudding with tahitian vanilla ice cream, hot chocolate 

Nikkei-cuisine is a combination of both Japanese and Peruvian ingredients and is a cooking style that prominently features Peruvian ingredients molded by Japanese techniques. The style of cuisine dates back to the late 1800s when Japanese immigrants arrived in Peru. Chef Myo and Ana have collaborated on a menu that showcases food at the center of their cultures – offering guests a new way to celebrate the holidays this year.

Hanukkah, alternatively referred to as the Festival of Lights, or chag ha-ooreem in Hebrew, is an annual celebration at One Market Restaurant. With New York style delicatessen pop-up concept turned permanent, Mark ‘n Mike’s, the restaurant celebrates Jewish cuisine on a daily basis. But this year, their Hanukkah offerings are expanding even further. 

In honor of the eight days of Hanukkah, One Market will be featuring a menu of eight new latkes with ranging ingredients. Appropriately named the Festival of Latkes, this nearly month-long offer will run from December 1 – December 23 and will be available during lunch and dinner service.  

Some of the highlights include a Philly Cheesesteak Latke with thinly sliced roast beef, caramelized onion, and provolone, a Florentine Latke with poached egg, sauteed spinach, and hollandaise, and a Wild Mushroom Latke with Emmental cheese, crème fraiche, and chives. 

For those looking to branch out beyond OMR’s variety of latkes, Mark ‘n Mike’s menu includes a showstopping Pastrami Reuben and Mark’s “Better than Bubbie’s?” Matzo Ball Soup during lunch and dinner.

In addition to its emphasis on local ingredients, Chef Myo adds some of his favorite Japanese influences throughout the menu. With the SF Pride Parade starting by the Embarcadero, the Ferry Building Marketplace is the perfect pit-stop to sip, celebrate and support the LGBTQ+ community this year. On Saturday, June 4, the Ferry Plaza Farmers Market will be hosting a free cooking demo with famed fermentationist, author, and queer farmer Sandor Katz, promoting his new book Fermentation Journeys, at the Foodwise Classroom. The demo will be followed by a book signing at Book Passage

On Sunday June 5th, HEAD WEST Marketplace is hosting its Pride Kickoff Celebration at the Ferry Building Back Plaza from 11am-5pm. Sip & shop small from Boulettes Larder cocktail bar and enjoy live music from local musicians with craft food and drinks inside the Ferry Building! In collaboration with Grace Powers, benefiting Rollin’ with the Homos, LYRIC + Queens of the Castro with performances by PRINCESS + other local drag performers, powered by BAAAHS, an incredible mobile DJ bus. 

HEAD WEST is a local, outdoor marketplace of makers, merchants, crafters, designers and artists in partnership with the iconic San Francisco Ferry Building and Muttville Senior Dog Rescue. HEAD WEST takes place the first Sunday of every month, March through December.

All month long, Humphry Slocombe will be scooping some of its best Pride flavors at the Ferry Building. Try the PRIDE Sundae made with two scoops of Harvey Milk & Honey Graham ice cream (or any flavor you want) with house-made pink marshmallow fluff and Fruit Loops. Other sweet treats offered throughout Pride Weekend include a lemon almond cookie with rainbow sprinkles from Acme Bread Company.

Chef Mark Dommen will be preparing an open-faced bagel with schmear, rainbow trout, and additional rainbow accompaniments to ring in Pride season all June long. For those looking for a beverage option or an afternoon pick-me-up, the Harvey Milkshake, made with homemade vanilla ice cream, Stolichnaya Vodka, crème de cacao, and prickly pear is just the trick. 50% of the Harvey Milkshake proceeds will be donated to PFLAG SF from all sales throughout the month of June.

Sip on the pride-inspired Big Cat cocktail all month long at San Francisco Proper Hotel. Inspired by Venzuelan baseball player Andrés Galarraga who played for the SF Giants in the early 2000’s Big Cat features: Santa Teresa 1796 Rum, passion fruit, vanilla, velvet falernum, lime, and mint. Partnering with REAF (the Richmond/Ermet Aid Foundation) of San Francisco, Lazy Susan will be donating 10% of the proceeds from sales of one of their most popular items, Chili Wontons and Almanac’s Love Hazy IPA (available by the can via online or onsite at Lazy Susan) throughout the month of June. Please note that the 10% donation will only apply to Almanac Love Hazy IPA orders made through Lazy Susan.

REAF was founded by two mothers, Barbara Richmond and Peggy Ermet, who lost their only sons to AIDS. The non-profit 501(c)(3) Arts/Health organization is dedicated to raising funds for AIDS services, hunger programs, and programs for underserved youth in the Bay Area through the production of entertainment programs. REAF began as a wholly volunteer-run agency, partnering with a single agency to produce an annual fundraising event called “Help is on the Way: San Francisco Cares.” Today, “Help is on the Way” has become one of the Bay Area’s largest annual benefit concerts and galas. REAF focuses not only on raising funds but also on increasing public awareness that the AIDS epidemic is not yet over through creating a web of community alliances.

Although One Market won’t be open for Mother’s Day this year due to a private event, Chef Dommen has shared a Swiss family recipe stemming from his mom. Officially known as Zurcher Geschnetzeltes, the recipe instructs how to prepare a Zurich Style Veal in a Cream Sauce.

This is a very traditional dish that my mother would make quite often for dinner. However, veal wasn’t always available to us, so she would make it with pork loin or pork tenderloin. It’s really quite simple. I’ve changed it a little by using reduced chicken jus instead of flour as the thickening agent and I cut the amount of cream in half. It makes the dish lighter to eat and it’s gluten free. Geschnetzeltes is traditionally served with rösti (recipe also provided).
